Cereal baguettes _

DOSAGE (2 cake tins with a diameter of 26 cm)

CEREAL MIX 1 kg - Water 550 g - fresh brewer's yeast 30 g - EVO oil 20 g

 
METHOD

Mix everything for 2 minutes on first speed and 6 minutes on second speed. Leave to rest for 15 minutes. Break up and leave to rest for another 10 minutes. Form with a rolling machine and leave to rise for 60 minutes in a proofer at 30° C and 80% RH. Bake in the oven at 200° C for 50 minutes for large pieces (200 g) or at 230° C for 30 minutes for small pieces (60 /80 g).
